Episode 62 - Fruity Christmas Slice

Ingredients:

  • 125g Sultanas
  • 125g currants
  • 125g raisins
  • 125g dates
  • 125g dried apricots
  • 125g mixed peel
  • 125g almond slithers
  • 60 g glaced cherries and pineapple
  • 3 Eggs
  • ? cup honey
  • ½ cup of Baileys Liqueur
  • 1¼ cups plain flour (sifted)

Method:

  1. Dice fruit to uniform size and combine all ingredients mixing well.
  2. Press into a lined 30 x 25cm tin.
  3. Cook at 150 degrees for 40 mins.
  4. Cool in tin and then slice and dust with Icing sugar and drizzle with Chocolate.
