
Ingredients:
- 1 Cup of Long Grain Rice
- 1 Bunch of Spring Onions (Chopped)
- 4 Rashes of Bacon
- 1 Can of Champignons (Sliced)
- 1 Carrot (Diced)
- ½ Cup of Corn Kernels
- ½ Cup of Frozen Peas
- 2 tbsp of Soy Sauce
- 2 Eggs (beaten)
- Salt
- Olive Oil
Method:
- Slice Spring Onion, Bacon & Mushrooms. Dice carrot. Place altogether in a bowl & then add the corn and peas.
- For cooking Omelette:
- Beat eggs, add a pinch of salt.
- Heat oil in frypan and add eggs.
- Spread evenly around frypan.
- Cook for about 2 minutes then flip over and cook for another 2 minutes.
- Remove from frypan & set aside.
- Heat oil in frypan.
- Add all the ingredients expect Rice and Soy Sauce.
- When ingredients are cooked through, add Soy Sauce and stir then add rice.
- Stir through thoroughly, add omelette.
- Stir then serve.
