Episode 11 - Crepes Suzette


  • ¾ cup Plain Flour
  • Pinch Salt
  • 3 Eggs
  • 2tbsp Oil
  • ¼ cup Milk
  • 125g Butter
  • ½ cup Sugar
  • 3tbsp Lemon Juice
  • ½ cup Grand Marnier


  1. Sift Flour and salt into bowl, make well in centre, and add whole eggs and oil. Work flour in from the sides.
  2. Add milk a little at a time, beating until smoother. Stand for one hour.
  3. Heat pan and grease lightly.
  4. From a small jug pour batter into pan. Turn so batter coats pan evenly.
  5. Cook slowly, loosening edges with a knife until set and lightly browned underneath.
  6. Turn and brown other side. Repeat with remaining batter.
  7. Melt butter in a clean pan and sugar. Cook over low heat until sugar melts and begins to caramelise.
  8. Pour in the fruit juices and stir over high heat until liquid reduces slightly and the caramelised sugar dissolves.
  9. Reduce heat and add folded pancakes and pour over the Grand Marnier, when warm set aflame.
  10. Place Pancakes on serving plates and pour over hot sauce.
