Osso Buocco

Episode 3 - Osso Buoco


  • 6 Veal Osso Buoco
  • 1 Medium Onion
  • 1 Broccoli
  • 3 Cups of Rice
  • 1 Garlic Clove
  • 1 Cup of Flour
  • 1 can diced Tomatoes
  • Salt & Pepper
  • ½ cup Black Olives


  1. Preheat oven between 180-200 degrees.
  2. Flour both sides of osso bucco, and then sear both sides in a heavy based pan with a little drizzle of olive oil, on the hotplate.
  3. Once they are all seared, put aside.
  4. Make sure that the pan can go from hotplate to the oven.
  5. Add a little extra oil in pan and then lightly fry up the onion till it becomes soft.
  6. Return the osso bucco to the pan together with the onion and pour your can of diced tomatoes all over.
  7. You may then salt and pepper to desire.
  8. Cover the pan with foil and put in the oven for about 50mins.
  9. The black olives don’t take long to cook so put them in about 15 mins towards the end of cooking.
  10. Once cooked, serve together with steamed rice and broccoli, and don’t forget the Italian bread. Buon Appetite.
