Ingredients:

  • 2 Large Roma Tomatoes
  • 500g Large Bocconcini
  • ½ cup Pitted Black Olives
  • 6 or 7 Fresh Basil Leaves
  • Dressing:
  • ¼ cup of Extra Olive Oil
  • 2 of Balsamic Vinegar
  • 1 teaspoon Sugar

Method:

  1. Cut tomatoes and bocconcini into slices.
  2. Layer the tomatoes and bocconcini alternately on serving plate, sprinkle with basil and pitted olives.
  3. Dressing: Combine all ingredients and mix.
  4. Pour over bocconcini and tomatoes.
