Episode 9 - Chicken Satay sewed with Coconut Rice

Ingredients:

  • 800g Chicken thighs (deboned)
  • 1 small jar of Crushed Garlic
  • 1 packet of Wooden Skewers
  • 1kg of Long-grain rice
  • Lemongrass
  • Cumin spice
  • Curry Powder
  • Fish Sauce
  • 1 Cucumber
  • 1 can of Coconut Cream
  • 1 jar of Chunky Peanut Butter

Method:

  1. Mix dry ingredients and oil together and marinade chicken.
  2. Skewer chicken (Soak skewer in water first).
  3. Cook over griddle or BBQ top until golden.
  4. Sauce - Mix ingredients for peanut sauce and simmer in saucepan until ready for serving.
