Ingredients:
- 800g Chicken thighs (deboned)
- 1 small jar of Crushed Garlic
- 1 packet of Wooden Skewers
- 1kg of Long-grain rice
- Lemongrass
- Cumin spice
- Curry Powder
- Fish Sauce
- 1 Cucumber
- 1 can of Coconut Cream
- 1 jar of Chunky Peanut Butter
Method:
- Mix dry ingredients and oil together and marinade chicken.
- Skewer chicken (Soak skewer in water first).
- Cook over griddle or BBQ top until golden.
- Sauce - Mix ingredients for peanut sauce and simmer in saucepan until ready for serving.
