Italian Steamboat

episode131-italiansteamboat This recipe is a great way to bring friends together around your table and enjoy the night together. Beef Strip Ingredients:
  • 400g Beef Strips
  • 1 tbsp Olive Oil
  • Sea Salt
  • Pepper
  • 1 tbsp Oregano
  • 2 Garlic Cloves (crushed)
Mix all ingredients in a bowl and set aside. Calamari Ingredients:
  • 4 Calamari Tubes (sliced)
  • 1 tbsp Olive Oil
  • Zest of 1 Lemon
  • Salt (do not add salt to marinade, season later)
  • Pepper
Mix all ingredients in a bowl and set aside. Scallops Ingredients:
  • 8 Natural Scallops
  • (Finish with Sea Salt & Pepper later)
Tomato Sauce Base:
  • 4L Tomato Juice
  • 2 Onions (chopped)
  • 6 Garlic Cloves (crushed)
  • 1 Bottle Dry White Wine
  • Salt
  • Pepper
Place all ingredients in a pot and bring to the boil. Reduce heat to a simmer. Meat Balls Ingredients:
  • 400g Wagyu Mince
  • 200g Parmesan Cheese
  • 1 tbsp Parsley
  • 2 Eggs
  • 200g Breadcrumbs
  • Salt
  • Pepper
Mix all ingredients together and form into the size of a golf ball. Set aside. Sausage Ingredients:
  • 4 Hot Italian Sausages
Cut each sausage into 4 pieces. Prawns Ingredients:
  • 12 Raw King Prawns (shell off)
Chilli Mussels Ingredients:
  • 1 kg Mussels
  • 1 Chilli (freshly chopped)
  • 1 bunch Basil (chopped)
Cook in a saucepan until all shells have opened up and set aside until it is time to add to the steamboat. Chilli Crab Ingredients:
  • 4 Blue Manner Crabs.
Break in half and clean. Method:
  1. Pour the sauce into the steamboat.
  2. Grill beef strips and eat.
  3. Grill calamari pieces and eat.
  4. Grill scallops, season with salt and pepper then eat.
  5. Immerse the meatballs into the sauce and cook for about 5 minutes. Eat and enjoy.
  6. Immerse the hot sausages into the sauce and cook also for about 5 minutes and then enjoy.
  7. Next place prawns on the grill and eat.
  8. Immerse all the vegetables into the sauce, cook for a few minutes and enjoy the beautiful flavours that has been infused from the sauce.
  9. Add the mussels and coat them well in the sauce and enjoy the flavours.
  10. Finally, immerse the crabs into the sauce, cook through and eat.
At the end of this Italian Steamboat you have an amazing red sauce stock, which is good to use the next day. You can either throw in all the left over food from the steamboat and eat it as a stew or make pasta, risotto etc.
