Vegetable & Baked Bean Pastry

Ingredients:

  • 1 Pomegranate (seeded)
  • Puff Pastry
  • Baked Beans or Shredded Chicken, Tuna or Tofu
  • Assortment of Vegetables (chopped into small pieces)
  • Broccoli
  • Cabbage (shredded)
  • Mushroom
  • Zucchini
  • Peas
  • Corn
  • Chilli/Jalapenos (optional)
  • Parmesan Cheese
  • Ovenproof Paper

Method:

  1. Take your Savoury Puff Pastry out of the freezer and place it on baking paper on a tray.
  2. Make sure you place it so that it is diagonal on tray so that when you fold it will be across the tray.
  3. Preheat the oven to 180°C.
  4. Chop vegetables into small pieces.
  5. Lay vegetables on to puff pastry and put the beans on top.
  6. Add the rest of the vegetables on top of the baked beans and sprinkle some Parmesan on top (optional).
  7. Wrap the sides first to overlap then the top and pinch corners to seal.
  8. Prick parcel with a fork and add Parmesan on top. Alternatively you can brush top with milk or beaten egg.
  9. Cook in the oven for 20 - 25 mins turning around after about 10 - 15 mins to brown evenly.
  10. Add a simple side salad of either baby spinach and alfalfa with cut cherry tomatoes and either tomato sauce or chilli sauce.
