Grilled Chicken with Feta Cheese & Sundried tomatoes served with Cauliflower Mash



  • 2 Chicken Breasts
  • 100g Feta Cheese
  • 100g Sundried Tomatoes
  • Olive Oil (spray)
  • Half Cauliflower
  • 2 tbsp Cream
  • 50g Butter
  • 1 whole Potato (peeled)
  • Salt
  • Pepper


  1. Preheat the oven to 200°C.
  2. Wash the cauliflower and prepare to be put on the boil.
  3. Peel the potato slicing thinly and prepare to boil.
  4. Boil for 10 – 15 minutes in salted water.
  5. Cut the chicken breasts almost in half and season with salt and pepper.
  6. Crumble in the feta cheese and then place the sundried tomatoes into the split place on a baking tray lined with baking paper.
  7. Season with salt and pepper and spray lightly with olive oil.
  8. Then place it in the oven and cook for approximately 15 minutes.
  9. Check the chicken at approximately 10 minutes and turn over if necessary.
  10. Use a blitz to mash the cauliflower and potato.
  11. Add cream and butter for a creamy mixture.
  12. Serve the chicken on the side with a cauliflower mash.
  13. Serve with crusty ciabiata bread, balsamic vinegar and virgin olive oil.
