(Set aside 2 cups of full cream milk.) Place the major ingredients in a heavy based pot, add full cream milk, unsalted butter, vanilla essence, nutmeg, lemon and orange zest, sliced almonds, raisins/sultanas and vanilla sugar and heat slowly while stirring with a wooden spoon.
Into a mixing bowl stir the coarse semolina, beaten egg and 2 cups of full cream milk into a smooth liquid.
When the full cream milk comes close to the boil (i.e. do not boil) slowly pour the semolina mix into it while stirring it. The full cream milk mix will begin to thicken. Turn down the heat.
Take a parfait glass and drizzle the maple syrup around the inside of the glass.
When the semolina has thickened pour the mix in the individual parfait glasses and finish with sliced almonds and a sprinkle of cinnamon on top. Extra maple syrup on top to suit your sweet tooth.
