Bean and Potato Salad

Episode 16 - Bean and Potato Salad

Ingredients:

  • 500g thin Italian beans
  • 3 – 4 potatoes
  • Olive Oil (1 tbsp)
  • 1 clove Garlic (chopped)
  • Parsley (chopped)
  • 1 Spring Onion (sliced)
  • French dressing (2 tbsp)
  • Pinch of Salt & Pepper

Method:

  1. Peel and dice potatoes. Place the potatoes into boiling salted water for 8 minutes.
  2. While potatoes are cooking, clean and cut beans.
  3. Add the beans to the potatoes and cook for 5 – 6 minutes.
  4. Drain and cool.
  5. Dress with remaining ingredients.
