Episode 18 - Agnello with Caper Sauce

Ingredients:

  • 8 Lamb Cutlets
  • 1 tbsp Flour
  • 1 egg, beaten
  • 1 cup fresh Breadcrumbs
  • ½ cup Pinenuts finely chopped
  • 1 tbsp chopped fresh Parsley
  • 2 tbsp grated Pecorino Cheese
  • Caper Sauce:
  • 500g Pasta Sauce
  • Garlic
  • Salt & Pepper
  • Olive Oil
  • Fresh Basil
  • 2 tbsp Capers

Method:

  1. Preheat oven to 180 degrees.
  2. Coat cutlets in flour, egg then combined breadcrumbs, pine nuts, parsley and cheese.
  3. Press coating firmly.
  4. Place into a buttered baking dish.
  5. Dot each cutlet with butter.
  6. Bake in oven for 45 minutes.
  7. Serve with Caper Sauce. Caper Sauce:
  8. Place sauce, oil, garlic, salt, pepper and basil in a saucepan and bring to the boil and then simmer for 2 hours.
  9. Add Capers.
