Couscous Salad

Episode 24 - Couscous Salad

Ingredients:

  • ¾ Couscous
  • 1 cup of vegetable stock
  • Rocket or English Spinach
  • 4 ripe Tomatos
  • ¼ Red Onion, thinly sliced
  • ¼ Lemon Juice
  • Salt & Pepper
  • Extra Virgin Olive Oil

Method:

  1. Boil water and add stock.
  2. Add Couscous and slowly stir.
  3. Cover and leave for 5 minutes.
  4. Wash Spinach and then add all the other ingredients together except Couscous, stir till combined.
  5. Make sure Couscous has cooled and then add it to the salad. Tip: Put this salad together just before serving
