- 1 red Onion
- 2 Zucchini
- 1 clove Garlic
- Olive Oil
- 3 tbsp grated Parmesan
- Fresh Chilli
- Basil & Parsley
- 500g Spaghetti
- Grill Zucchini, red onion & garlic, then leave to cool.
- Finely chop vegetables, herbs and chilli.
- Combine oil, cheese, salt, pepper and vegetables.
- Meanwhile put some water to the boil and cook spaghetti, strain.
- Stir through the Zucchini mixture and serve.
- Add extra Parmesan to serve.
