Ingredients:
- 500g Spaghettini – Barilla No.3
- 2 bottles of homemade Pasta sauce
- 1kg Pork Ribs
- 1kg Chicken Wings
- 1 Red Onion
- 1 Garlic Clove
- 1 tin of diced Tomatoes in tomato sauce
- 1 Bayleaf
- Dry mixed Italian Herbs
- Fresh Italian Parsley chopped
- Fresh Basil chopped
- Extra Virgin Olive Oil
- 1 cup of Water or Chicken Stock
- Salt & Pepper
- Grated Parmesan Cheese
Method:
- Heat oil in a saucepan and add the Pork Ribs and cook quickly until brown.
- Set aside on a plate and cover with foil.
- Repeat this method with the Chicken Wings.
- Add onion and garlic to the pan and cook for a few minutes until soft, and add the bottle of tomato sauce season with salt and pepper.
- Add some Basil and Parsley and also Bayleaf.
- Bring to the boil and add a cup of White Wine.
- Stir for a few minutes and then add a tin of Roma/Chopped tomatoes and return the Pork Ribs and Chicken Wings to the sauce, cover and gently simmer for a few hours or until meat is tender and falls off bone.
- Add remaining chopped herbs at the end.
- Once the sauce is just about ready, boil a pot of water for the spaghettini.
- Once this boils salt water and cook pasta accordingly.
- Serve pasta and meat with sauce in a bowl.
