Spaghetti with Pork Ribs & Chicken Wings

Episode 25 - Spaghetti with Pork Ribs & Chicken Wings


  • 500g Spaghettini – Barilla No.3
  • 2 bottles of homemade Pasta sauce
  • 1kg Pork Ribs
  • 1kg Chicken Wings
  • 1 Red Onion
  • 1 Garlic Clove
  • 1 tin of diced Tomatoes in tomato sauce
  • 1 Bayleaf
  • Dry mixed Italian Herbs
  • Fresh Italian Parsley chopped
  • Fresh Basil chopped
  • Extra Virgin Olive Oil
  • 1 cup of Water or Chicken Stock
  • Salt & Pepper
  • Grated Parmesan Cheese


    1. Heat oil in a saucepan and add the Pork Ribs and cook quickly until brown.
    2. Set aside on a plate and cover with foil.
    3. Repeat this method with the Chicken Wings.
    4. Add onion and garlic to the pan and cook for a few minutes until soft, and add the bottle of tomato sauce season with salt and pepper.
    5. Add some Basil and Parsley and also Bayleaf.
    6. Bring to the boil and add a cup of White Wine.
    7. Stir for a few minutes and then add a tin of Roma/Chopped tomatoes and return the Pork Ribs and Chicken Wings to the sauce, cover and gently simmer for a few hours or until meat is tender and falls off bone.
    8. Add remaining chopped herbs at the end.
    9. Once the sauce is just about ready, boil a pot of water for the spaghettini.
    10. Once this boils salt water and cook pasta accordingly.
    11. Serve pasta and meat with sauce in a bowl.
