Chicken Mushroom Spinach & Bacon Risotto

Episode 26 - Chicken Mushroom Spinach & Bacon Risotto


  • 800g Chicken Breast
  • 1 Onion
  • Olive Oil
  • Cracked Pepper
  • 1 ltr Chicken/Vegetable Stock
  • 1 bunch of Baby Spinach
  • 4 rashers of Bacon
  • 200g fresh Mushrooms
  • 150g Parmesan Cheese
  • 500g Arborio Rice


  1. Dice Chicken Breast, Onion, Bacon and Mushroom.
  2. Fry onion till transparent with bacon.
  3. Throw in Chicken Breast and brown.
  4. Add in seasoning ie. Salt & cracked pepper.
  5. Throw in rice and cook for a couple of minutes till transparent.
  6. Pour in Chicken/Vegetable Stock.
  7. Simmer for a few minutes.
  8. Throw in mushrooms and spinach and a touch more cracked pepper.
  9. Keep stirring and cooking until the stock evaporates, add more water if need (if the rice is not cooked yet)
  10. Add in Parmesan cheese five minutes before end.
