Prosciutto wrapped Tomatoes with Fetta & Basil

Episode 26 - Prosciutto wrapped Tomatoes with Fetta & Basil

Ingredients:

  • Half a dozen Big Red Tomatoes
  • 200g Prosciutto
  • 250g Fetta
  • Olive Oil to drizzle
  • A bunch of Basil leaves
  • Salt & Pepper
  • ΒΌ cup of Balsamic Vinegar
  • 2 tbsp Sugar

Method:

  1. Cut tops off boil tomatoes slightly for a couple of minutes.
  2. Scoop middle out of tomatoes.
  3. Crumble Fetta.
  4. Place Fetta in the core of tomatoes.
  5. Wrap Prosciutto around tomatoes.
  6. Boil up Balsamic Vinegar with sugar to condense slightly.
  7. Whack a Basil leaf on top of the tomato and drizzle Balsamic oil.
  8. Grill for 2 minutes.
