Almond Fruit Flan

Episode 30 - Almond Fruit Flan


  • 1 ΒΌ cups Plain flour
  • 90g Butter
  • 3 tbsp Castor Sugar
  • 1 eggIngredients for Filling:
  • 125g Butter
  • 1/3 cup Castor Sugar
  • 2 eggs
  • 1 cup ground Almonds
  • 1 tbsp Self Raising Flour
  • Fruit of your choice i.e. 2 pears, 2 apples or tinned peaches
  • 2 tbsp Apricot Jam
  • 1 tbsp Brandy (optional)

Method for Pastry:

  1. Combine all of the ingredients in the food processor and process until combined.
  2. Remove pastry from knead on a floured board.
  3. Press pastry into prepared flan tin, which has been sprayed, with cooking spray thoroughly.
  4. Pour filling into the base.
  5. Arrange fruit on top of the filling.
  6. Cook in pre-heated moderate oven for 35 minutes until golden brown.
  7. Remove from oven and brush with warmed apricot jam.

Method for Filling:

  1. Melt butter.
  2. Add sugar and combine thoroughly.
  3. Add eggs and mix well.
  4. Fold in flour and almonds.

Method for Filling:

  1. Either put jam and brandy (or juice from tinned fruit can be used at this stage) into a microwave bowl and heat for about 1 minute on medium.
  2. OR Place jam and brandy (or juice) into a saucepan and warm through on low heat.
