Chicken Parmesan with Basil Sauce

Episode 30 - Chicken Parmesan with Basil Sauce


  • 4 large Chicken Breasts, sliced through the middle in half
  • 1 cup fresh Breadcrumbs
  • ½ cup grated Parmesan Cheese
  • 1 tbsp Parsley
  • 90g Butter
  • 1 teaspoon Worcestershire Sauce Ingredients for Basil Sauce:
  • 1/3 cup Oil
  • ¼ cup White Vinegar
  • 1 clove Garlic, crushed
  • 1 cup Fresh Basil Leaves, finely chopped
  • 1/3 cup Cream
  • Salt & Pepper (optional)


  1. Combine the breadcrumbs, cheese and parsley in a bowl.
  2. Melt the butter in a separate bowl and add crushed garlic and Worcestershire sauce.
  3. Either dip chicken breasts in butter mixture or lay chicken breasts in a roasting dish and pour butter mixture over the top.
  4. Press breadcrumb mixture over the top of each chicken fillet.
  5. Bake uncovered in pre-heated moderate oven for 25 – 30 minutes. Method for Basil Sauce
  6. Combine oil, vinegar, garlic, basil leaves and cream in a saucepan.
  7. Stir until heated through and do not boil.
  8. Season with salt & pepper (optional)
