Episode 31 - Stuffed Peppers

Ingredients:

  • 12 Green Paprika Peppers
  • ½ chopped Onion
  • 1 – 2 Roma Tomatoes
  • 2 – 3 tbsp Olive Oil
  • 500 – 600g Beef Mince
  • ½ cup Long grain Rice
  • 3 slices sliced bread
  • ½ cup of Water
  • Chopped Parsley (handful)
  • Salt & Pepper

Method:

  1. Wash and take seeds from peppers.
  2. Add onions to mince.
  3. De-seed the tomatoes, chop into small pieces and add it to the mince.
  4. Mix in the rice, salt, pepper and olive oil.
  5. Cut off crust from sliced bread, cut into quarters, put into a shallow dish, cover with the water and let soak for 5 – 10 mins.
  6. Squash the bread to a mush with a fork.
  7. Mix all ingredients with hands until evenly mixed. Add a little more water if mixture is firm.
  8. Take small handfuls and stuff mince into the peppers.
  9. Put into a dish with a little oil on the base. Pour a little oil over the peppers, salt and then cook in moderate oven on 175°C for approx 30 mins. Turn occasionally and serve with boiled green vegies.
