Fudge Brownies

Episode 44 - Fudge Brownies


  • 140g Butter
  • ¾ cup pure unsweetened cocoa, sifted
  • 2 cups Caster Sugar
  • 1½ teaspoons vanilla
  • 1 large Egg
  • 5 large Egg whites (10 tbsp)
  • 1 cup Gluten Free wheat free Multipurpose Mix
  • ½ cup finely chopped walnuts


  1. Preheat oven to 160°C. Grease an 8 inch square baking pan.
  2. In a 2 litre saucepan, combine butter and cocoa; stir over medium-low heat until butter is melted and mixture is well blended.
  3. Remove from heat and stir in sugar and vanilla.
  4. Add egg and egg whites; beat 1 minutes or until blended.
  5. Stir in flour until well blended.
  6. Stir half the quantity of walnuts (¼ cup).
  7. Spread batter evenly in the oiled pan.
  8. Sprinkle the remaining walnuts evenly over batter.
  9. Bake until brownies feel dry on top (about 45 minutes).
  10. Let cool in pan on rack, and then cut into 2¼ inch squares.
  11. Once cool, store in an airtight container – providing they have not all been eaten yet!
