Rice Mousse

Episode 46 - Rice Mousse


  • 500 grams rice
  • 500 grams sugar
  • 500 grams crushed and roasted hazelnuts
  • 500 grams drinking chocolate
  • 1 small bar dark chocolate
  • 1 jar Nutella
  • Ground cinnamon
  • 300 grams thickened cream
  • Full cream milk
  • Rind of 1 nice orange grated finely


  1. Boil rice until overcooked and soft, strain and add sugar, fresh cream and milk.
  2. Bring to boil.
  3. After boiling vigorously, blend rice with a hand blender until rice is a smooth consistency.
  4. Add hazelnuts and cinnamon to taste, stirring not to allow sticking.
  5. Place half of mixture into another bowl.
  6. To remaining mixture add drinking chocolate and dark chocolate and as much Nutella as desired.
  7. Add orange rind, stirring until chocolate and mixture combine.
  8. Place in layers into desert glasses, alternating between the two mixtures.
  9. Top with crushed hazelnuts.
