- 1 Red Fancy Lettuce (torn into pieces)
- 1 Burpless Cucumber (sliced)
- 2 Tomatoes (cut into wedges)
- 1 Carrot (peeled & grated)
- 4 Mint Leaves (finely sliced) Dressing:
- 1 tbsp French Mustard
- 2 tbsp Vinegar
- 6 tbsp Olives Oil
- Mix all the ingredients together
- Place all the ingredients in a large bowl.
- Pour in the dressing and toss well.
