Episode 63 - Chicken in a Hurry

Ingredients:

  • 8 Chicken Thighs (boneless)
  • 4 slices of Bacon cut finely
  • 1 large Onion cut finely
  • 1 large fresh Tomato cut finely
  • 8 slices Mozzarella cheese
  • Oil
  • Salt & Pepper

Method:

  1. Fry bacon and onion only, add tomato (put to one side).
  2. Fry chicken thighs until cooked.
  3. Lay chicken on a baking tray.
  4. Place a slice of mozzarella cheese on top and place under grill until melted.
  5. Spoon bacon, tomato and onion on top.
  6. Place a slice of mozzarella cheese on top and place under grill until melted.
  7. Serve with mashed potatoes or sweet potato and salad.
