Episode 63 - Spinach & Chicken Roly Poly

Ingredients:

  • 250g Frozen Spinach
  • 4 Eggs
  • 1 tbsp Cornflour
  • ½ teaspoon ground Nutmeg
  • Freshly ground Pepper
  • 6 tbsp toasted Breadcrumbs
  • 1 cup grated Gruyere cheese (or any cheese you prefer)
  • 1 cup cooked diced Chicken
  • Fresh herbs (for decoration)

Method:

  1. Thaw the spinach and drain well.
  2. Separate the eggs and place the yolks, cornflour, nutmeg, and pepper into a food processor or mixed.
  3. Mix until combined.
  4. Beat egg white unstill stiff and mix in spinach.
  5. Fold the egg yolk mixture with the egg white mixture.
  6. Pour into lines 12×8 sponge roll tin.
  7. Bake on 190°C for 10 – 15 minutes.
  8. Turn onto clean tea towel sprinkled with breadcrumbs.
  9. Roll up from short side (like a sponge roll)
  10. Leave for approx 1 min.
  11. Unroll & sprinkle with cheese and chicken.
  12. Reroll & return to oven for 5 minutes and then slice.
