Tracy’s Trifles

Episode 65 - Tracy's Trifles Serves 8 Preparation Time: 20 mins


  • 1 pkt jam roll fingers
  • ½ plain sponge
  • 750g can peaches in mango juice (or fruit of your choice)
  • 1 pkt jelly (pre made)
  • 3 tbsp Custard powder
  • 3 cups milk
  • 2 tbsp sugar
  • 8 desert glasses or bowls


  1. Slice jam roll approximately in ½ centimetre widths.
  2. Cut sponge into small cubes.
  3. Arrangejam roll slices around the bottom of each bowl and up the sides.
  4. Intoa pot bring to the boil 2 ½ cups of milk.
  5. Dissolve custard powder and sugar in remaining milk and add to the pot stirring continuously till the custard thickens up and comes back to boil.
  6. Take of the heat, and pour a small portion of custard in each bowl.
  7. Add a layer of sponge and slightly compress into the custard.
  8. Drizzle some juice from the peaches over the sponge to moisten, and top with 2 or 3 peach slices.
  9. Layer with some more sponge and moisten with more juice, top with custard. Decorate with remaining peaches.
  10. Top with jelly when custard is cold.
  11. Can be made the night before.
