Rosa’s Mussels

Episode 68 - Rosa's Mussels

Ingredients:

  • 1kg Mussels
  • 1 Onion
  • 2 Tomatoes
  • 2 Cloves of Garlic
  • Olive Oil
  • 1 Lemon
  • Salt & Pepper

Method:

  1. Clean mussels under running water.
  2. Peel and cut onion into wedges.
  3. Cut tomatoes into wedges also.
  4. Cut lemon into slices and peel and finely crush garlic.
  5. Heat oil in a heavy based saucepan.
  6. Add garlic, onion and soften slightly.
  7. Add tomatoes and lemon. Stir Well.
  8. Pour in the mussels and add a pinch of salt and pepper and stir well.
  9. Put a lid on saucepan and let steam.
  10. Mussels are ready when they open up.
