Episode 69 - Baked Green Chicken

Ingredients:

  • 6 Chicken Marylands
  • 2 bunches of Coriander leaves (fresh & blended)
  • 1 small tub Greek-Style Yoghurt (300g)
  • 3 – 4 Green Chillies (Chopped)
  • 1 tbsp Crushed Ginger
  • 1½ tbsp Crushed Garlic
  • Mint Leaves (blended)
  • Salt
  • 2 Lemons
  • 2 – 3 Large Red Onions
  • Pepper Powder
  • Olive Oil

Method:

  1. Using a blender, blend coriander, mint leaves, roughly chopped onion, fresh chilli, ginger, garlic, fresh lemon juice to a finely minced paste.
  2. Using a large bowl add paste, yoghurt, salt and pepper.
  3. Mix ingredients together. Remove skin from chicken. (Any chicken pieces can be used) and cut slits into the chicken pieces to allow the marinade to get in, for more flavour.
  4. Place chicken in marinade and let sit for 1 – 2 hours.
  5. Drizzle oil on bottom of baking tray. Allow space between each chicken piece.
  6. Drizzle oil over the top of chicken before baking.
  7. Bake for 30 minutes on 200°.
  8. Turn chicken pieces over and lower heat to 180° for a further 45 minutes.
