- 10 Litre Bucket Green Tomatoes
- Hot Chilli
- Cut green tomatoes in slices; add in layers in bucket, adding salt between layers.
- Repeat until bucket is full.
- Once full, place a weight on top to press tomatoes. Eg a smaller bucket with weight.
- Allow 24 hours.
- Drain all water (squeeze excess water) and add vinegar. Repress for an additional 24 hours.
- Drain vinegar, add garlic, oregano, hot chilli to taste, place in jar; fill to top with oil.
