Episode 71 - Charlie's Green Tomato Preserve


  • 10 Litre Bucket Green Tomatoes
  • Salt
  • Vinegar
  • Garlic
  • Oregano
  • Hot Chilli


  1. Cut green tomatoes in slices; add in layers in bucket, adding salt between layers.
  2. Repeat until bucket is full.
  3. Once full, place a weight on top to press tomatoes. Eg a smaller bucket with weight.
  4. Allow 24 hours.
  5. Drain all water (squeeze excess water) and add vinegar. Repress for an additional 24 hours.
  6. Drain vinegar, add garlic, oregano, hot chilli to taste, place in jar; fill to top with oil.
Add to meals, sandwiches & enjoy.
