Rosa’s Ice Cream, Cookies & Marsala Dessert

Episode 75 - Rosa's Ice Cream, Cookies & Marsala Dessert


  • 1½ packets of choc chip cookies
  • 2 cups of Marsala
  • Vanilla ice cream
  • 300mls fresh whipped cream
  • 150gms grated chocolate


  1. Dip the cookies into the Marsala and arrange them in a square or rectangular dish. A plastic dish is ideal.
  2. Using a spatula cut slices of ice cream and cover the biscuits.
  3. Spread half of the whipped cream over the ice cream.
  4. Sprinkle half of the grated chocolate on top.
  5. Repeat the above process so that you have a double layer
  6. Cover the dish and allow to set in freezer for several hours.
  7. Dip a knife into warm water and cut the ice cream dessert into squares.
  8. Use a spatula to remove the ice cream squares. The first piece is always difficult.
  9. Sprinkle more grated chocolate onto the plate and serve.
THIS DESSERT IS FOR ADULTS ONLY. (Variations: Instead of Marsala - use Tia Maria, Rum, Sherry, Irish Cream or whatever you desire. Instead of vanilla ice cream – use chocolate ice cream.)
