Rice Noodle Salad with Sesame Dressing

Episode 77 - Rice Noodle Salad with Sesame Dressing Serves 4


  • 100g snow pea sprouts, stalks trimmed
  • 150g snow peas, blanched
  • 3 green onions, thinly sliced
  • ½ cup coriander leaves
  • ½ cup mint leaves
  • 125g rice vermicelli, cooked and cooled
  • 1 tbs sesame seeds, toasted Dressing
  • 30g ginger, finely grated
  • 3 tbs soy sauce
  • 1tbs mirin
  • 2 tbs rice vinegar
  • 1 tbs sesame oil
  • 1 clove garlic, crushed
  • ½ tsp castor sugar


  1. Squeeze ginger over a small bowl, retaining the juice.
  2. Discard the solids.
  3. Add the soy sauce, mirin, rice vinegar, oil, garlic and sugar and mix to combine. Set aside.
  4. Place the snow pea sprouts, snow peas, onion, coriander, mint and vermicelli in a large bowl. Toss with dressing.
  5. Serve onto individual plates and top with toasted sesame seeds.
