Chicken Tikka Masala

Episode 79 - Chicken Tikka Masala


  • 700g Chicken Breast
  • 1 Onion
  • ½ Cup Peeled Garlic Cloves
  • 1 Medium Twig of Ginger
  • 2 Limes
  • 600ml Double Thick Cream
  • 1 Red Chilli, Seeded and Finely Chopped
  • 2 teaspoons Chilli Powder
  • 5 teaspoons Ground Turmeric
  • 1 Sprig of Fresh Coriander
  • Salt and Pepper
  • 4 tbsp Vegetable Oil
  • Naan Bread or Steamed Basmati Rice, to Serve


  1. Chop the chicken in 1inch strips, place them in a bowl and add the chilli, the rind of both limes, some chopped coriander and salt and pepper.
  2. Let this sit while you preheat the oil in a large frypan fairly high.
  3. Chop the onion, garlic and ginger and add this to the oil.
  4. Once the onion in nearly brown add the butter, let it melt then add the chicken to fry.
  5. Once the chicken has been sealed reduce the heat, add the cream, turmeric and chilli powder.
  6. Let this simmer for 10 minutes, stirring throughout
  7. Add more coriander just before taking out to serve.
