Episode 86 - Antipasto

Ingredients & Method:

Grilled Italian Sausage:
  • 2 Dry Italian Sausages - sliced thin & grilled or fried
Crumbed Eggplant:
  • 2 Eggplants, sliced to approximately 1.5cm each
  • 4 cups Breadcrumbs
  • 2 Eggs, beaten
  • Salt & Pepper to season eggplants
  • Olive Oil (for frying)
  1. Dip eggplant into egg and then into breadcrumbs.
  2. Heat oil in frypan, and fry eggplant until golden on each side.
Deep Fried Stracchino Cheese:
  • 500g Stracchino Cheese, cut into fingers
  • 1 Egg (beaten)
  • 2 cups of Breadcrumbs
  • 2 cups of Canola Oil (for frying)
  1. Dip cheese into egg and then into breadcrumbs.
  2. Heat oil in deep fryer.
  3. Fry until golden & serve hot
Turkish Garlic Bread:
  • 1 large Turkish Bread (cut into 2cm strips)
  • 2 tbsp Parsley (finely chopped)
  • 2 cloves Garlic (finely chopped)
  • 60g Butter/Margarine
  1. Mix parsley, garlic & margine all together in a small bowl.
  2. Spread evenly over strips of Turkish bread.
  3. Toast in sandwich press, oven or grill and serve hot.
