Episode 104 - Beef Brodo & Osso Buocco alla Lina

Ingredients:

  • Beef Brodo:
  • 3 pieces of Osso Buocco
  • 450g tin of tomatoes
  • 1 onion (peeled and cut in quarters)
  • 3 stalks of celery (washed and cut into chunks)
  • Salt and Pepper
  • 2 litres of water
  • 250g of pastina (small pasta of any shape)
  • Osso Buocco:
  • 2 pieces of Osso Buocco

Method:

Beef Brodo:
  1. Place 2 litres of water and washed Osso Buocco in a saucepan.
  2. Bring the water to boil. Cook Osso Buocco in boiling water for 10 minutes (or until meat is completely cooked)
  3. Skim residue off the top of the water.
  4. Add tin of tomatoes, onion and celery and season with salt and pepper.
  5. Let it boil for 20 - 30 minutes (until vegetables and meat are very tender), then strain.
  6. Chop 1 piece of Osso Buocco into small pieces & place back into broth.
  7. Bring broth to boil.
  8. Add pastina, cook until pastina is cooked.
  9. Serve and enjoy
Osso Buocco:
  1. Chop up meat and place into a bowl..
  2. Add salt & pepper to season.
  3. Cut half an onion into small pieces & mix.
  4. Add oil and vinegar to taste.
  5. Serve.
