Episode 93 - Cheese Triangles 'Tiropites'


  • Filling:
  • 125g Feta Cheese
  • 60g Tasty Cheddar Cheese (grated)
  • 2 Eggs (beaten lightly)
  • 2 tbsp Parsley (chopped)
  • ¼ tsp Nutmeg
  • Pepper Case:
  • 500g Filo Pastry (room temp.)
  • ¾ cup melted butter
Note: Preheat oven to 180°C


Prepare Filling:
  1. Finely crumble feta into a bowl, add grated cheese and mix.
  2. Stir in eggs, parsley, nutmeg and pepper to taste.
Shape Triangles:
  1. Cut each filo pastry sheet into four, stack and cover under a tea towel.
  2. Lay filo strip out and brush lightly with melted butter.
  3. Place a teaspoon of filling on one corner
  4. Fold corner over to make a triangle shape and continue to fold in triangles until the end of the strip.
  5. Place seem side down on baking tray and brush with melted butter.
  6. Cook in a moderate oven 180°C for 15-20 minutes until puffed and golden brown.
  • May be served hot or cold
  • May be frozen until cooking is required.
  • Variation use ½ cup of Spinach in the filling
