Episode 94 - Baked Tuna Pasta with Cannellini Beans

  • 500g Pasta (any short pasta will be good e.g, penne, fusilli, shellss)
  • 400g tin of Tuna (tuna in olive oil is best)
  • 700g Pasta Sauce
  • 500g Cannellini Beans (you can use the canned beans)
  • 2 eggs
  • 2 cups Cheddar Cheese (shredded)
  • Parsley
  • Basil
  • 2 stalks celery
  • Chilli
  • ½ Red Capsicum
  • Pepper and Salt
  • Olive oil

  1. Prepare the sauce first: In a saucepan pour a little olive oil and the tuna and simmer for a few minutes.
  2. Chop the parsley, basil, celery, chilli and red capsicum and add to the saucepan.
  3. Allow to simmer until everything begins to soften.
  4. Add the pasta sauce and water and stir thoroughly.
  5. Add salt and pepper to taste. Cook slowly for at least 45 minutes.
  6. Stir occasionally. Do not allow the sauce to thicken. Add more water if necessary.
  7. Bring a pot of water to the boil. Add teaspoon of salt.
  8. Put in the pasta and stir to stop sticking together.
  9. Do not allow the pasta to cook completely. Remove from heat before it reaches al dente.
  10. Drain the water completely.
  11. Place the pasta into a baking dish.
  12. Cover with the shredded cheese and mix.
  13. Beat the two eggs and add to the pasta. Mix again.
  14. Add the cannellini beans and the tuna sauce.
  15. Gently combine everything together.
  16. Cover the baking dish with a sheet of baking paper.
  17. Cook in a moderate oven for 40 minutes.
Serve and enjoy. (You Can Easily Vary This Recipe. Instead Of Tuna You Can Use Any Mince Meat Or A Combination Of Minced Meats.)
