Fish Moqueca

Episode 95 - Fish Moqueca

Ingredients:

  • 4 Fish Cutlets (700g)
  • 2 Lemons
  • 2 Large Onions (sliced)
  • 2 Cloves of Garlic
  • 1 Red Capsicum (sliced)
  • 1 Green Capsicum (sliced)
  • 2 Large Tomatoes (sliced)
  • ΒΌ teaspoon Saffron
  • 200mL Coconut Milk
  • Salt
  • Olive Oil

Method:

  1. Marinate the fish with lemon juice and salt.
  2. Heat oil in a large pan.
  3. Add the onion and garlic, then lay the red & green capsicums and the sliced tomatoes on top.
  4. Place a lid on the pan and cook on low heat until the tomatoes are cooked.
  5. Spread the fish cutlets over the tomatoes, not overlapping each other and cook for about 15 minutes with the lid on.
  6. Pour in the coconut milk and just heat through.
  7. Serve with rice.
