Episode 97 - Mediterranean Pork

Ingredients:

  • 1 tbsp Mustard Seeds
  • 1 Clove Garlic
  • 1 tbsp Capers
  • ½ cup Kalamata Olives
  • ½ cup Chopped Parsley
  • Grated Zest & Juice of 1 Lemon
  • 1½ tbsp Oil
  • 125g Fetta Cheese
  • ¼ cup White Wine
  • 750g Pork Fillet

Method:

  1. Cut pork into desired sizes.
  2. Put oil in pan and cook for 5 – 10 minutes.
  3. Place all other ingredients except fetta cheese into a bowl and mix well.
  4. Pour over pork and let simmer for another 5 minutes.
  5. Top with fetta cheese and let that settle for another 2 – 3 minutes.
