Fillet Steak with Strawberry Jam Jus & Wok Fried Vegetables

Episode 105 - Fillet Steak with Strawberry Jam Jus & Wok Fried Vegetables

Ingredients:

  • 1kg Fillet Steak (1'' thick slices)
  • 1kg Baby Potatoes (cut into quarters)
  • 1 tablespoon Tarragon
  • 3 cloves Garlic (peeled & crushed)
  • 2 tablespoons Balsamic Vinegar
  • 1 bunch Asparagus
  • 1 kgs Carrots (peeled & cut into strips)
  • 250g Runner Beans
  • ΒΌ cup pitted Dates (chopped)
  • Olive Oil
  • Strawberry Jam Jus:
  • 2 tablespoons Strawberry Jam
  • 2 tablespoons Balsamic Vinegar
  • 1 glass Red Wine
  • 2 tablespoons BBQ Sauce
  • 1 teaspoon Brown Sugar

Method:

  1. The vegetables will need to be pre-cooked in the microwave oven.
  2. Cook each of them separately in a bowl with a little hot water and cover with glad wrap for approximately 5 minutes.
Potatoes:
  1. Heat a wok and add oil.
  2. Add pre-cooked potatoes and cook until golden.
  3. Stir in dates, balsamic vinegar and garlic.
  4. Finally add tarragon and salt and pepper.
  5. Set aside.
Carrots:
  1. Re-heat wok and add oil.
  2. Add carrots and stir.
  3. Sprinkle with tarragon, salt, pepper and brown sugar.
  4. Cook for 2 minutes and then set aside.
Beans:
  1. Heat a skillet with some oil.
  2. Add beans and a splash of balsamic vinegar.
  3. Season with salt and pepper.
  4. Remove and set aside.
Asparagus:
  1. Same process as the beans.
Fillet Steak:
  1. Drizzle each steak with olive oil.
  2. Place in a pre-heated skillet and cook to your liking.
Strawberry Jam Jus:
  1. In the hot skillet add red wine, jam, balsamic vinegar and BBQ sauce.
  2. Season with salt and pepper.
  3. Cook until the sauce has thickened.
  4. Pour over steak and serve with vegetables
