French Onion Soup with Bread and Gruyere Cheese

Episode 110 - French Onion Soup with Bread and Gruyere Cheese


  • 4 large onions (peeled and thinly diced)
  • 60g Butter
  • 2 Bay Leaves
  • 1 teaspoon Sugar
  • 2 tbsp Flour
  • 1 teaspoon Minced Garlic
  • 2 Oxo Beef Cubes
  • 1 Oxo Chicken Cubes
  • 3 cups Water (to mix with the oxo cubes)
  • 2 cups Water (to add gradually at latter stage)
  • Salt and pepper
  • French stick
  • 1 tbsp Butter (for bread)
  • 1½ cups grated Swiss Gruyere with a little grated Parmesan cheese


  1. In a large saucepan, sauté the onions in butter on medium high heat until golden browned, but not burned, about 30 minutes. Add the sugar and flour help with the browning.
  2. Add garlic and sauté for 1 minute. Add the stock, bay leaf,and 3 cups of water. bring to boil then turn down heat and simmer for about 30 minutes.
  3. Gradually adding the extra 2 cups of water over the next half hour. Season to taste with salt and pepper. Discard the bay leaf.
  4. Cut French stick into inch thick slices, grate the cheeses, combine with butter and spread on the bread slices. place bread under grill and melt till golden brown.
  5. Place the cheese bread at the bottom of each bowl and then pour soup over the top.
  6. Serve immediately & serves 4
