Chicken Salad

  • Cos Lettuce
  • 200g Sundried Tomatoes
  • 1 Cucumber
  • 1 Carrot (grated)
  • 100g Danish Feta
  • CafĂ© 26 Dressing
  • Chicken Breast or Cold Cooked Chicken

Method:

  1. First slice chicken breast and lightly pan fry in some oil and let cool.
  2. Meanwhile dice cucumber and grate carrot and slice about 5-7 leaves of lettuce (depending on size) mix in a bowl.
  3. Roughly chop the sundried tomatoes and mix into bowl.
  4. Chop cooled chicken and mix into salad, top salad with crumbled Danish feta and drizzle the dressing over the top.
