Ingredients:
- Cos Lettuce
- 200g Sundried Tomatoes
- 1 Cucumber
- 1 Carrot (grated)
- 100g Danish Feta
- Café 26 Dressing
- Chicken Breast or Cold Cooked Chicken
Method:
- First slice chicken breast and lightly pan fry in some oil and let cool.
- Meanwhile dice cucumber and grate carrot and slice about 5-7 leaves of lettuce (depending on size) mix in a bowl.
- Roughly chop the sundried tomatoes and mix into bowl.
- Chop cooled chicken and mix into salad, top salad with crumbled Danish feta and drizzle the dressing over the top.
